Asparagus cooked with zero fat wild mushroom gravy, salt, pepper, sprinkled with a mix of crushed/blended cashews with nutritional yeast, minced garlic. Potatoes are red mixed with garlic powder, salt and almond milk. Quinoa is seasoned with fresh herbs.

No Butter Baked Potatoes

This was dinner…I know it may not look pretty but it was actually delicious! First I baked some red potatoes. Then I made salsa and set it aside. Next, I put one can each drained/rinsed black beans and chickpeas in the Ninja with some cilantro and blended until smooth. This mix served as a “butter”. I squeezed potatoes open, topped with bean mix and then topped with salsa.No Butter Baked Potatoes
