Delightful broccoli soup. You don’t need to love broccoli to enjoy this delicious soup. Very nutritious and so yummy! Don’t underestimate the deliciousness healthy foods can bring you. It’s got fresh ginger, lemon, broccoli with other veggies, spices and liquids that balance it all out perfectly.
My morning ‘Taster’ made this comment: “This is nothing short of spectacular!” I must agree! It will be in my cookbook. My amazing seasonings for this casserole are outstanding. There are times to be modest…this is not one of those times. Love it! It looks cheesy but there are no cheese components or cheese substitutes in this. My special sauce and seasonings are what brings this casserole it’s crazy goodness.

There are several vegan, gluten free cheeses on the market but my cheddar recipe is perfect for dishes like this. You can use this Potato and Onion Cheddar Bake as a base. Throw some peppers and chunks of my sausage (also included in my cook book) to make a heartier meal.

Brown rice topped with spicy chili. Moist and sweet cornbread. Romaine lettuce, baby kale and spinach salad with balsamic vinaigrette dressing. Vegan and gluten free.
Ready for some football? Make this easy delicious Salsa:
Serves 3-4
3 vine ripe tomatoes chopped
1/4 cup Vidalia (sweet onion) chopped
1 tablespoon green bell pepper diced
1 tablespoon jalapeno peppers minced
1 tablespoon fresh lime juice
1 tablespoon fresh cilantro chopped
1/2 tablespoon garlic minced
1/4 teaspoon sea salt
generous pinch of ground black pepper
Place all ingredients in a covered container and gently toss. Enjoy!
Beans are good for us for many reasons and are a great source of protein! One of the main reasons some people don’t eat beans is due to the gas they can deliver. However, you can do some things to lower this. First, make sure you rinse canned beans very well. If using dry beans, soak them about 8 hours. Discard the soaking water and rinse well. Don’t serve them with dairy products like cheese and sour cream. Dairy can cause stomach bloat and gas as well. If you’re vegan you wouldn’t use dairy anyway. Instead, serve them with easily digestible foods like a side of rice (grains) and a salad (greens). Also, if you’re not used to eating beans you should start by only eating 1/4 cup and slowly increase your intake daily.

Fruit art is a great way to get children to eat their fruit. My grandchildren have fun participating in the art work and then enjoy eating it.
Serves 6
2-lbs organic red potatoes
1/2 cup vegan butter (Earth Balance)
3/4 cup unsweetened almond milk…
1/2 tsp pepper
1 tsp garlic salt
Cut the potatoes in 1″ cubes and boil in water for 20-25 minutes. Drain and mash them. Blend in butter until it’s completely melted. Stir in milk, salt and pepper.
