Sweet Butternut Squash

Serves 4
1 medium size butternut squash
1/2 cup brown sugar
1/2 vegan gluten free butter (Earth Balance)
1/8 tsp cinnamon (optional)
Peel the squash and discard pulp and seeds. Cut squash into 1″ cubes. Boil until tender with fork (approx. 20-25 minutes). Drain and mash the squash. Blend in the brown sugar, butter and cinnamon. Enjoy!

Hi everyone :)! My name is Deborah Lynne and I started, “Kudos To The Cook” to tell my story and bring you delectable vegan, gluten-free dishes. My story originated due to health reasons that prompted me to explore a plant-based diet.  I was experiencing crashing fatigue episodes and was severely nauseated on a daily basis. My health improved dramatically when I changed to a plant-based diet. Learning about this new diet opened my eyes to the horrific facts about factory farming. Once I learned about that, there was no turning back to animal consumption. Still, the daily nausea continued to come and go. This was later accompanied by stomach pain and sickness not appropriate to mention on a cooking venue. After recording my food intake and using process of elimination, I discovered the culprit was gluten. I cut gluten out of my life 100%. Now living on a plant based gluten free diet and feeling healthier than ever, I wanted to share my delicious recipes, health tips and inspiration. You’ll find many more recipes in my upcoming book; “Kudos To The Cook” in the Kitchen with Deborah Lynne.
